Leftover rice can be blended into smoothies for fiber and mild thickness; use about 1/4–1/2 cup cooked rice per smoothie and blend with fruits and liquid. Rice also works in baked goods: fold into muffins, pancakes, or quick breads for texture, or use cooked rice in rice puddings.
For baked goods, pulse rice in a food processor for a finer texture if desired. Cold rice absorbs moisture differently, so adjust wet ingredients accordingly.
