Press and cube firm tofu, then pan-fry until golden. Set aside. Sauté garlic and onions, add diced vegetables (carrots, bell peppers, peas), then add cold rice and stir-fry on high heat. Return tofu, add soy sauce, a dash of sesame oil, and optional chili paste.
Finish with chopped green onions and toasted sesame seeds.
