Replace part or all of the cooking water with canned coconut milk for rich flavor. For 1 cup rice, use about 1 cup coconut milk plus 1/2 cup water (adjust to rice type). Rinse rice, combine liquid, a pinch of salt, and a small sugar if desired. Bring to a gentle boil, then simmer covered until liquid is absorbed. Rest 10 minutes and fluff.
